Dagestan cuisine

Dagestan cuisine is rich and varied. Those who tasted Dagestan dishes at least once will never forget them.

Chudu is Number One on the list of Dagestan dishes. Every ethnic group has their own recipe of this dish.

Here are some recipies of chudu from our former students.

This is Dargin chudu. I think everyone who lives here has eaten it at least once in their life. To cook Dargin chudu we need: 1 kg of flour, 1 spoon of salt, water. For filling: 600-700 g of beef mince, 250 g of onion, 1 kg of potatoes, salt and pepper (to taste).

Cooking: At first we need to knead bland dough. It should be soft. When you’ve done it, leave it under a napkin for 15 minutes. At the same time we should prepare the filling: we chop the onion and add it to a bowl with the mince, add salt, pepper and water (3/4 of a glass), then mix it all. The mince should become soft. Then, we take a ball of the dough and roll it. Then we take the mince and spread it on the dough. The next step is to slice potatoes and put the slices on the mince. Now there is the most difficult task, to braid the dough (my advice is to pinch it on the edges). Then we heat the oven to 250 degrees and bake our chudu for 20 minutes.

Chudu  with cottage cheese (an ethnic dish made of dough filled with cottage cheese, baked in the oven or in a pan)

To cook it we need flour – 320 gr, water, cottage cheese, one egg, onions, boiled butter, butter or sour cream and salt .

At first we must put one egg, onions fried in boiled butter and salt in cottage cheese. Then stir it. Divide the dough in equal pieces. Roll the dough and put the filling on it, then put another piece of the dough on the top of it. Press the edges tightly and then put it into the oven. After baking  it, put some butter or sour cream on the top.
